* 4 Slices bacon cut into 1/2 inch strips
* 4 Tablespoons Oil
* 1 cup onions chopped
* 2 cloves of garlic pulverized
* 1/2 cup carrots chopped
* 1/2 cup celery chopped
* 1/3 cup of flour
* 2 1/2 cups cold chicken stock (vegetable stock)
* 1 bay leaf
* 1 cup of potato peeled and diced
* 1/4 cup red bell pepper diced
* 1 tsp Salt
* 1/2 tsp Pepper
* Cobs of 4 ears of corn where the kernels have been removed and reserved
* Corn from the cobs used
* 1 cup of milk
In a large sauce pan over medium heat put Bacon and oil.
Render until crispy remove and reserve and add in (have about 4 Tablespoons of Soy Bacon Bits on hand) onions and garlic. Saute for about 2-4 minutes.
Add in 1/3 flour.
Stir rapidly getting the flour to coat everything in the pan and soak up the oils then add in chicken stock.
Stir until all the flour is dissolved add in bay leaf,potatoes, red pepper, salt and pepper.
Allow to simmer until potato is fork tender.
Add Corn from the cobs used and milk
Bring to a soft boil, allow to boil for 2 minutes remove cobs, and bay leaf. Serve topped with Reserved bacon pieces (bits) and fresh sliced green onion.
